Ingredients
- 2 large eggplants, cut into cubes
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 1 green chili, sliced
- 1 tsp turmeric powder
- 1 tsp chili powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil
- 2 cups water
Instructions
- Heat oil in a pan and sauté the onions, garlic, and ginger until fragrant.
- Add the tomatoes, green chili, and spices. Cook until the tomatoes are soft.
- Add the eggplant cubes and water. Cover and simmer for 20-25 minutes until the eggplant is tender.
- Garnish with fresh coriander and serve hot with rice or roti.
