Bodubiyaa Riha (spicy Eggplant Curry)

Ingredients

  • 2 large eggplants, cut into cubes
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 1 green chili, sliced
  • 1 tsp turmeric powder
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • 2 cups water

Instructions

  1. Heat oil in a pan and sauté the onions, garlic, and ginger until fragrant.
  2. Add the tomatoes, green chili, and spices. Cook until the tomatoes are soft.
  3. Add the eggplant cubes and water. Cover and simmer for 20-25 minutes until the eggplant is tender.
  4. Garnish with fresh coriander and serve hot with rice or roti.
