Bodubiyaa Riha, also known as Spicy Pumpkin Curry, is a traditional Maldivian dish that is bursting with flavors. This creamy and aromatic curry is perfect for a cozy dinner on a chilly evening.

Bodubiyaa Riha (spicy Pumpkin Curry)

Ingredients

  • 500g pumpkin, peeled and cubed
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch ginger, grated
  • 1 green chili, sliced
  • 1 tomato, chopped
  • 1/2 tsp turmeric powder
  • 1 tsp chili powder
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1 cup coconut milk
  • Salt to taste
  • 2 tbsp oil

Instructions

  1. Heat oil in a pan and sauté the onions, garlic, ginger, and green chili until the onions are soft and translucent.
  2. Add the tomatoes and cook until they are soft and mushy.
  3. Stir in the turmeric, chili powder, cumin powder, and coriander powder. Cook for a minute to release the flavors.
  4. Add the pumpkin cubes and coat them well with the spice mixture.
  5. Pour in the coconut milk and season with salt. Cover and simmer for 20-25 minutes or until the pumpkin is tender.
  6. Once the pumpkin is cooked, mash some of the pieces to thicken the curry. Simmer for a few more minutes.
  7. Adjust the seasoning and serve hot with steamed rice or roti.
