Boerewors

Boerewors is a traditional South African sausage that is perfect for a braai (barbecue) or a hearty meal. It is made with a blend of spices and minced meat, giving it a unique and delicious flavor.

Ingredients

  • 1 kg beef or pork mince
  • 25g coriander seeds
  • 10g black pepper
  • 10g nutmeg
  • 15g salt
  • 15g vinegar
  • 15g ground cloves
  • 30g beef suet or pork fat

Instructions

  1. Toast the coriander seeds in a dry pan until fragrant, then grind them in a mortar and pestle.
  2. Mix all the spices and vinegar into the meat, ensuring it is well combined.
  3. Feed the mixture into a sausage casing, twisting it every 15cm to form individual sausages.
  4. Refrigerate the sausages for at least 12 hours to allow the flavors to meld.
  5. Grill the boerewors over medium heat for about 15 minutes, turning occasionally, until cooked through.
