Boerewors Mac And Cheese

Ingredients

  • 1 lb Boerewors sausage, casing removed
  • 10 oz macaroni
  • 2 cups grated cheddar cheese
  • 1 cup milk
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni according to package instructions. Drain and set aside.
  2. In a large skillet, cook the Boerewors sausage over medium heat until browned and cooked through. Remove from skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
  4. Gradually whisk in the milk until smooth and thickened to make a béchamel sauce.
  5. Stir in 1 ½ cups of the grated cheddar cheese until melted and well combined.
  6. Add the cooked macaroni and cooked Boerewors sausage to the cheese sauce, stirring to combine.
  7. Season with salt and pepper to taste.
  8. Transfer the Boerewors Mac and Cheese to a serving dish and sprinkle the remaining ½ cup of cheddar cheese on top.
  9. Broil in the oven for 2-3 minutes until the cheese is bubbly and golden brown.
