Ingredients
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 lb (450g) beef stew meat, cubed
- 6 cups (1.5 liters) beef broth
- 2 potatoes, peeled and diced
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the onion, carrots, and celery, and cook until softened.
- Add the garlic and beef stew meat, and cook until the meat is browned.
- Pour in the beef broth and add the potatoes and bay leaf. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 1 hour, or until the meat is tender and the vegetables are cooked through.
- Remove the bay leaf and adjust the seasoning if needed.
- Serve the Český sen polévka hot, garnished with fresh parsley if desired.
