Bohemian Mushroom and Potato Bake (Česká houbová a bramborová zapékanka)

Ingredients

  • 500g potatoes, peeled and thinly sliced
  • 400g mushrooms, sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 200ml heavy cream
  • 100g grated cheese
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil and butter over medium heat. Add the onions and garlic, and sauté until softened.
  3. Add the mushrooms to the skillet and cook until they release their liquid and become golden brown. Season with salt and pepper.
  4. Layer half of the sliced potatoes in a greased baking dish. Top with half of the mushroom mixture.
  5. Repeat the layers with the remaining potatoes and mushrooms.
  6. Pour the heavy cream over the layers and sprinkle the grated cheese on top.
  7. Cover the baking dish with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15 minutes until the top is golden and bubbly.
  8. Let the bake cool for a few minutes before serving.
