Bohemian Mushroom and Sauerkraut Stew (Český houbový guláš s kyselým zelím)

Ingredients
- 500g mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups sauerkraut, drained and rinsed
- 2 tbsp tomato paste
- 1 tsp caraway seeds
- 1 tsp paprika
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until the onions are translucent.
- Add the mushrooms to the pot and cook until they release their liquid and start to brown.
- Stir in the tomato paste, caraway seeds, and paprika, and cook for another 2 minutes.
- Add the sauerkraut and vegetable broth to the pot. Bring the stew to a boil, then reduce the heat and let it simmer for 45 minutes.
- Season with salt and pepper to taste.
- Serve the Český houbový guláš s kyselým zelím hot, garnished with a dollop of sour cream and a sprinkle of fresh parsley.
