Bohemian Mushroom and Sauerkraut Stew (Český houbový guláš s kyselým zelím)

Ingredients

  • 500g mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups sauerkraut, drained and rinsed
  • 2 tbsp tomato paste
  • 1 tsp caraway seeds
  • 1 tsp paprika
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until the onions are translucent.
  2. Add the mushrooms to the pot and cook until they release their liquid and start to brown.
  3. Stir in the tomato paste, caraway seeds, and paprika, and cook for another 2 minutes.
  4. Add the sauerkraut and vegetable broth to the pot. Bring the stew to a boil, then reduce the heat and let it simmer for 45 minutes.
  5. Season with salt and pepper to taste.
  6. Serve the Český houbový guláš s kyselým zelím hot, garnished with a dollop of sour cream and a sprinkle of fresh parsley.
