Bohemian Mushroom Risotto (Český houbový rizoto)

Ingredients

  • 2 cups Arborio rice
  • 4 cups chicken or vegetable broth
  • 1 cup dried porcini mushrooms
  • 1/2 cup white wine
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, soak the dried porcini mushrooms in hot water for 20 minutes. Drain and chop them.
  2. In a large pot, heat the olive oil and butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
  3. Add the Arborio rice to the pot and stir to coat it with the oil and butter. Cook for 2 minutes.
  4. Pour in the white wine and cook until it is absorbed by the rice.
  5. Add a ladleful of the broth to the rice and stir until the liquid is absorbed. Continue adding the broth, one ladleful at a time, stirring constantly, until the rice is creamy and al dente.
  6. Stir in the chopped porcini mushrooms and grated Parmesan cheese. Season with salt and pepper to taste.
  7. Remove from heat and let the risotto rest for a few minutes before serving.
