Bohemian Mushroom Risotto (Český houbový rizoto)
Český houbový rizoto, or Bohemian Mushroom Risotto, is a classic Czech dish that combines creamy risotto with earthy mushrooms for a comforting and satisfying meal.
Ingredients
- 2 cups Arborio rice
- 4 cups chicken or vegetable broth
- 1 cup dried porcini mushrooms
- 1/2 cup white wine
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a bowl, soak the dried porcini mushrooms in hot water for 20 minutes. Drain and chop them.
- In a large pot, heat the olive oil and butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the Arborio rice to the pot and stir to coat it with the oil and butter. Cook for 2 minutes.
- Pour in the white wine and cook until it is absorbed by the rice.
- Add a ladleful of the broth to the rice and stir until the liquid is absorbed. Continue adding the broth, one ladleful at a time, stirring constantly, until the rice is creamy and al dente.
- Stir in the chopped porcini mushrooms and grated Parmesan cheese. Season with salt and pepper to taste.
- Remove from heat and let the risotto rest for a few minutes before serving.
