Ingredients

  • 1 pound sauerkraut, drained and rinsed
  • 4 cups chicken or vegetable broth
  • 1 onion, chopped
  • 2 large potatoes, peeled and diced
  • 1 cup diced smoked sausage or ham
  • 2 bay leaves
  • 1 teaspoon caraway seeds
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1 tablespoon all-purpose flour
  • 1/2 cup sour cream (optional, for serving)

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Sprinkle the flour over the onions and cook, stirring constantly, for 1-2 minutes to make a roux.
  3. Add the sauerkraut, potatoes, smoked sausage or ham, bay leaves, caraway seeds, and chicken or vegetable broth to the pot. Season with salt and pepper.
  4. Bring the soup to a boil, then reduce the heat to low and simmer for 45 minutes to 1 hour, or until the potatoes are tender.
  5. Remove the bay leaves and adjust the seasoning if needed.
  6. Serve the soup hot, topped with a dollop of sour cream if desired.
