Ingredients
- 1 pound sauerkraut, drained and rinsed
- 4 cups chicken or vegetable broth
- 1 onion, chopped
- 2 large potatoes, peeled and diced
- 1 cup diced smoked sausage or ham
- 2 bay leaves
- 1 teaspoon caraway seeds
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 1 tablespoon all-purpose flour
- 1/2 cup sour cream (optional, for serving)
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Sprinkle the flour over the onions and cook, stirring constantly, for 1-2 minutes to make a roux.
- Add the sauerkraut, potatoes, smoked sausage or ham, bay leaves, caraway seeds, and chicken or vegetable broth to the pot. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat to low and simmer for 45 minutes to 1 hour, or until the potatoes are tender.
- Remove the bay leaves and adjust the seasoning if needed.
- Serve the soup hot, topped with a dollop of sour cream if desired.
