Ingredients
- 2 1/2 cups all-purpose flour
- 1/4 cup granulated sugar

- 1 packet active dry yeast
- 2 eggs, beaten
- 1 teaspoon vanilla extract
- 2 cups sweet cheese (such as tvaroh or farmer's cheese)
- 1/4 cup powdered sugar
- 1 teaspoon lemon zest
Instructions
- In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
- In a small bowl, dissolve the yeast in the warm milk. Let it sit for 5 minutes until foamy.
- Add the yeast mixture, beaten eggs, and vanilla extract to the flour mixture. Stir until a soft dough forms.
- Cover the dough and let it rise in a warm place for 1 hour, or until doubled in size.
- In a separate bowl, mix together the sweet cheese, powdered sugar, and lemon zest to make the filling.
- Preheat the oven to 350°F (175°C). Punch down the dough and divide it into 12 equal pieces. Flatten each piece into a circle and place a spoonful of the sweet cheese filling in the center. Fold the edges of the dough over the filling and pinch to seal.
- Place the kolaches on a baking sheet lined with parchment paper and let them rise for an additional 15 minutes.
- Bake for 20-25 minutes, or until the kolaches are golden brown. Let them cool before serving.
