Boiled Beef Dinner (pot-au-feu)
Pot-au-Feu is a traditional French beef stew that is simmered to perfection, creating a comforting and hearty meal. This recipe is a classic dish that is perfect for a cozy family dinner or a special occasion.
Ingredients
- 3 lbs beef chuck, cut into large pieces
- 4 carrots, peeled and cut into chunks
- 4 celery stalks, cut into chunks
- 2 onions, peeled and halved
- 4 cloves garlic, peeled
- 2 bay leaves
- 6 whole cloves
- 1 teaspoon black peppercorns
- 1 bouquet garni (thyme, parsley, and bay leaf tied together)
- Salt, to taste
- 6 small potatoes, halved
- 6 slices of crusty bread
Instructions
- In a large pot, place the beef, carrots, celery, onions, garlic, bay leaves, cloves, peppercorns, and bouquet garni. Add enough water to cover the ingredients.
- Bring the pot to a boil, then reduce the heat to a simmer. Skim off any foam that rises to the surface.
- Cover and simmer for 2 hours, then add the potatoes and continue to simmer for an additional hour, or until the beef is tender.
- Remove the beef and vegetables from the pot and transfer to a serving dish.
- Strain the broth and discard the solids. Season the broth with salt to taste.
- To serve, place a slice of crusty bread in each bowl, top with the beef and vegetables, and ladle the hot broth over the top.
