Boiled Beef Dinner (pot-au-feu)

Ingredients

  • 3 lbs beef chuck, cut into large pieces
  • 4 carrots, peeled and cut into chunks
  • 4 celery stalks, cut into chunks
  • 2 onions, peeled and halved
  • 4 cloves garlic, peeled
  • 2 bay leaves
  • 6 whole cloves
  • 1 teaspoon black peppercorns
  • 1 bouquet garni (thyme, parsley, and bay leaf tied together)
  • Salt, to taste
  • 6 small potatoes, halved
  • 6 slices of crusty bread

Instructions

  1. In a large pot, place the beef, carrots, celery, onions, garlic, bay leaves, cloves, peppercorns, and bouquet garni. Add enough water to cover the ingredients.
  2. Bring the pot to a boil, then reduce the heat to a simmer. Skim off any foam that rises to the surface.
  3. Cover and simmer for 2 hours, then add the potatoes and continue to simmer for an additional hour, or until the beef is tender.
  4. Remove the beef and vegetables from the pot and transfer to a serving dish.
  5. Strain the broth and discard the solids. Season the broth with salt to taste.
  6. To serve, place a slice of crusty bread in each bowl, top with the beef and vegetables, and ladle the hot broth over the top.
