Boiled Custard

Ingredients

  • 4 cups whole milk
  • 1 cup granulated sugar
  • 6 large egg yolks
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a heavy-bottomed saucepan, heat the milk over medium heat until it is hot but not boiling.
  2. In a separate bowl, whisk together the sugar and egg yolks until well combined.
  3. Slowly pour the hot milk into the egg mixture, whisking constantly to prevent the eggs from curdling.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon.
  5. Remove the custard from the heat and stir in the vanilla extract and salt.
  6. Strain the custard through a fine-mesh sieve to remove any lumps.
  7. Transfer the custard to a bowl and cover with plastic wrap, pressing the wrap directly onto the surface of the custard to prevent a skin from forming.
  8. Chill the custard in the refrigerator for at least 2 hours before serving.
