Ingredients
- 1 lb mixed seafood (shrimp, mussels, calamari)
- 8 oz linguine pasta
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup white wine
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Boil a large pot of salted water and cook the linguine according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the mixed seafood to the skillet and cook for 2-3 minutes until slightly opaque.
- Pour in the white wine and let it simmer for 2-3 minutes to reduce slightly.
- Add the cherry tomatoes and cooked linguine to the skillet. Toss everything together and cook for an additional 2-3 minutes.
- Sprinkle with fresh parsley, season with salt and pepper, and toss to combine.
