Bokkeumbap
Bokkeumbap is a popular Korean fried rice dish that is easy to make and incredibly flavorful. It's a great way to use up leftover rice and other ingredients you have on hand.
Ingredients
- 3 cups cooked rice
- 1 cup mixed vegetables (carrots, peas, corn)
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 2 eggs
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add the diced onion and mixed vegetables, and cook until softened.
- Push the vegetables to one side of the skillet and add the minced garlic to the empty space. Cook for 30 seconds.
- Add the cooked rice to the skillet and stir to combine with the vegetables.
- Push the rice to the side of the skillet and crack the eggs into the empty space. Scramble the eggs and mix with the rice and vegetables.
- Add soy sauce, sesame oil, salt, and pepper to the skillet. Stir well to combine all the ingredients.
- Cook for an additional 2-3 minutes, stirring frequently, until everything is heated through.
- Remove from heat and serve hot.
