Bokkeumbap

Bokkeumbap is a popular Korean fried rice dish that is easy to make and incredibly flavorful. It's a great way to use up leftover rice and other ingredients you have on hand.

Ingredients

  • 3 cups cooked rice
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 2 eggs
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add the diced onion and mixed vegetables, and cook until softened.
  3. Push the vegetables to one side of the skillet and add the minced garlic to the empty space. Cook for 30 seconds.
  4. Add the cooked rice to the skillet and stir to combine with the vegetables.
  5. Push the rice to the side of the skillet and crack the eggs into the empty space. Scramble the eggs and mix with the rice and vegetables.
  6. Add soy sauce, sesame oil, salt, and pepper to the skillet. Stir well to combine all the ingredients.
  7. Cook for an additional 2-3 minutes, stirring frequently, until everything is heated through.
  8. Remove from heat and serve hot.
