Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 package of flatbread or tortillas
  • 2 tablespoons olive oil

Instructions

  1. In a bowl, mix together the chopped spinach, feta cheese, green onions, cilantro, ground coriander, ground cumin, salt, and pepper.
  2. Place a few tablespoons of the spinach and cheese mixture onto one half of a flatbread or tortilla, then fold the other half over to enclose the filling.
  3. Press the edges firmly to seal the bolani.
  4. Heat olive oil in a large skillet over medium heat. Cook the bolani in the skillet for 3-4 minutes on each side, or until golden brown and crispy.
  5. Remove from the skillet and place on a paper towel to drain excess oil.
