Bolani Esfenaj is a delicious Afghan stuffed flatbread filled with creamy spinach and cheese. It's a popular dish in Afghan cuisine and makes for a satisfying appetizer or light meal.
Ingredients
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/4 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1 package of flatbread or tortillas
- 2 tablespoons olive oil
Instructions
- In a bowl, mix together the chopped spinach, feta cheese, green onions, cilantro, ground coriander, ground cumin, salt, and pepper.
- Place a few tablespoons of the spinach and cheese mixture onto one half of a flatbread or tortilla, then fold the other half over to enclose the filling.
- Press the edges firmly to seal the bolani.
- Heat olive oil in a large skillet over medium heat. Cook the bolani in the skillet for 3-4 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and place on a paper towel to drain excess oil.
- Serve the bolani warm, cut into wedges, and enjoy!
