Bolani (spinach And Cheese Stuffed Flatbread)
Bolani is a popular Afghan flatbread stuffed with a delicious filling of spinach and cheese. It's a versatile dish that can be enjoyed as a snack, appetizer, or even a light meal.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup water
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 cup green onions, chopped
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- Vegetable oil for frying
Instructions
- In a large bowl, combine the flour and salt. Gradually add the water and knead the dough until smooth. Cover and let it rest for 30 minutes.
- In another bowl, mix the spinach, feta cheese, green onions, coriander, cumin, and black pepper.
- Divide the dough into 6 equal portions and roll each portion into a thin circle.
- Place a generous amount of the spinach and cheese filling on one half of each circle, then fold the other half over the filling and press the edges to seal.
- Heat a skillet over medium heat and add a tablespoon of oil. Cook each bolani for 2-3 minutes on each side until golden brown and crispy.
- Remove from the skillet and drain on paper towels. Serve hot and enjoy!
