Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup green onions, chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the flour and salt. Gradually add the water and knead the dough until smooth. Cover and let it rest for 30 minutes.
  2. In another bowl, mix the spinach, feta cheese, green onions, coriander, cumin, and black pepper.
  3. Divide the dough into 6 equal portions and roll each portion into a thin circle.
  4. Place a generous amount of the spinach and cheese filling on one half of each circle, then fold the other half over the filling and press the edges to seal.
  5. Heat a skillet over medium heat and add a tablespoon of oil. Cook each bolani for 2-3 minutes on each side until golden brown and crispy.
  6. Remove from the skillet and drain on paper towels. Serve hot and enjoy!
