Bolinhos De Mandioca Fritos (fried Cassava Balls)
Bolinhos de Mandioca Fritos, or Fried Cassava Balls, are a popular snack in Guinea-Bissauan cuisine. These delicious fritters are made with cassava, also known as yuca, and are perfect for sharing with friends and family.
Ingredients
- 2 lbs cassava, peeled and cut into chunks
- 1 cup all-purpose flour
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup chopped cilantro
- 1 tsp salt
- 1/2 tsp black pepper
- Oil for frying
Instructions
- Boil the cassava chunks in a pot of water until tender, about 15-20 minutes. Drain and let cool.
- In a large bowl, mash the cooked cassava until smooth.
- Add the flour, onion, garlic, cilantro, salt, and black pepper to the bowl and mix until well combined.
- Shape the mixture into small balls, about 1-2 inches in diameter.
- Heat oil in a deep skillet over medium heat. Fry the cassava balls in batches until golden brown, about 3-4 minutes per batch.
- Remove the fried bolinhos from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve the bolinhos de mandioca fritos hot and enjoy!
