Ingredients

  • 2 lbs cassava, peeled and cut into chunks
  • 1 cup all-purpose flour
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped cilantro
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Oil for frying

Instructions

  1. Boil the cassava chunks in a pot of water until tender, about 15-20 minutes. Drain and let cool.
  2. In a large bowl, mash the cooked cassava until smooth.
  3. Add the flour, onion, garlic, cilantro, salt, and black pepper to the bowl and mix until well combined.
  4. Shape the mixture into small balls, about 1-2 inches in diameter.
  5. Heat oil in a deep skillet over medium heat. Fry the cassava balls in batches until golden brown, about 3-4 minutes per batch.
  6. Remove the fried bolinhos from the oil and place them on a paper towel-lined plate to drain excess oil.
