Bolitas De Yuca Fritas (fried Yuca Balls)
Bolitas de Yuca Fritas, or Fried Yuca Balls, are a popular snack in Ecuador. These crispy and flavorful yuca balls are perfect for sharing with friends and family, or enjoying as a tasty appetizer.
Ingredients
- 2 lbs yuca, peeled and cut into chunks
- 1 tsp salt
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup bread crumbs
- Oil for frying
Instructions
- In a large pot, bring water to a boil and add the yuca chunks. Cook until the yuca is tender, about 15-20 minutes. Drain and let cool.
- Once cooled, mash the yuca with a fork or potato masher. Add salt and mix well.
- Take small portions of the mashed yuca and roll them into balls, about 1 inch in diameter.
- Coat each yuca ball in flour, then dip into the beaten eggs, and finally roll in the bread crumbs until fully coated.
- Heat oil in a deep pan over medium heat. Fry the yuca balls in batches until golden brown, about 3-4 minutes per batch. Drain on paper towels.
- Serve the fried yuca balls hot and enjoy!
