Ingredients
- 2 lbs cassava, peeled and cut into chunks
- 1 cup grated cheese

- 2 eggs, beaten
- 1 cup breadcrumbs

Instructions
- Boil the cassava in salted water until tender, about 15-20 minutes. Drain and mash the cassava in a large bowl.
- Add the grated cheese, salt, and black pepper to the mashed cassava. Mix well to combine.
- Take a small portion of the cassava mixture and roll it into a ball about the size of a golf ball.
- Dip each ball into the beaten eggs, then roll it in the breadcrumbs until fully coated.
- Heat oil in a large skillet over medium heat. Fry the cassava and cheese balls in batches until golden brown, about 3-4 minutes per batch.
- Remove the balls from the oil and place them on a paper towel-lined plate to drain any excess oil.
