Bolivian Chicken and Potato Stew (Ají de Pollo)

Ingredients

  • 1 whole chicken, cut into pieces
  • 4 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, chopped
  • 1 red bell pepper, diced
  • 2 tablespoons vegetable oil
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 2 cups chicken broth
  • 1 cup frozen peas
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and brown them on all sides.
  2. Add the chopped onion, minced garlic, and diced bell pepper to the pot. Sauté until the vegetables are softened.
  3. Stir in the chopped tomatoes, ground cumin, and dried oregano. Cook for a few minutes until the tomatoes begin to break down.
  4. Pour in the chicken broth and add the diced potatoes. Season with salt and pepper. Cover the pot and simmer for 30-40 minutes, or until the chicken is cooked through and the potatoes are tender.
  5. Add the frozen peas and cook for an additional 5 minutes.
  6. Sprinkle the chopped parsley over the stew before serving.
