Bolivian Chicken and Potato Stew (Ají de Pollo)

Ingredients
- 1 whole chicken, cut into pieces
- 4 large potatoes, peeled and diced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, chopped
- 1 red bell pepper, diced
- 2 tablespoons vegetable oil
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 2 cups chicken broth
- 1 cup frozen peas
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and brown them on all sides.
- Add the chopped onion, minced garlic, and diced bell pepper to the pot. Sauté until the vegetables are softened.
- Stir in the chopped tomatoes, ground cumin, and dried oregano. Cook for a few minutes until the tomatoes begin to break down.
- Pour in the chicken broth and add the diced potatoes. Season with salt and pepper. Cover the pot and simmer for 30-40 minutes, or until the chicken is cooked through and the potatoes are tender.
- Add the frozen peas and cook for an additional 5 minutes.
- Sprinkle the chopped parsley over the stew before serving.
