Bolivian Lamb And Potato Curry

Ingredients

  • 1 lb lamb, cut into cubes
  • 2 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1/2 tsp chili powder
  • 1 cup coconut milk
  • 2 cups chicken or vegetable broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic, ground cumin, ground coriander, turmeric, and chili powder to the pot. Stir and cook for 1-2 minutes until fragrant.
  3. Add the cubed lamb to the pot and brown on all sides.
  4. Pour in the coconut milk and chicken or vegetable broth. Bring to a simmer and cook for 30 minutes, stirring occasionally.
  5. Add the diced potatoes to the pot and continue to simmer for an additional 20-30 minutes until the lamb is tender and the potatoes are cooked through.
