Ingredients
- 1 lb lamb, cut into cubes
- 2 large potatoes, peeled and diced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1/2 tsp chili powder
- 1 cup coconut milk
- 2 cups chicken or vegetable broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, ground cumin, ground coriander, turmeric, and chili powder to the pot. Stir and cook for 1-2 minutes until fragrant.
- Add the cubed lamb to the pot and brown on all sides.
- Pour in the coconut milk and chicken or vegetable broth. Bring to a simmer and cook for 30 minutes, stirring occasionally.
- Add the diced potatoes to the pot and continue to simmer for an additional 20-30 minutes until the lamb is tender and the potatoes are cooked through.
