Ingredients
- 4 cups of yuca, peeled and diced
- 1 teaspoon of salt
- 1/2 cup of all-purpose flour
- 2 eggs, beaten
- 1 cup of breadcrumbs
- Vegetable oil for frying
Instructions
- In a large pot, bring water to a boil and add the diced yuca and salt. Cook until the yuca is tender, about 15-20 minutes. Drain and let it cool.
- Mash the cooked yuca in a bowl until smooth. Take small portions of the mashed yuca and roll them into balls, about the size of a golf ball.
- Coat each yuca ball in flour, then dip into the beaten eggs, and finally coat with breadcrumbs, ensuring they are fully covered.
- Heat the vegetable oil in a deep pan over medium heat. Fry the yuca balls in batches until golden brown, about 3-4 minutes per batch. Remove and drain on paper towels.
- Serve the fried yuca balls hot and enjoy!
