Ingredients

  • 4 cups of yuca, peeled and diced
  • 1 teaspoon of salt
  • 1/2 cup of all-purpose flour
  • 2 eggs, beaten
  • 1 cup of breadcrumbs
  • Vegetable oil for frying

Instructions

  1. In a large pot, bring water to a boil and add the diced yuca and salt. Cook until the yuca is tender, about 15-20 minutes. Drain and let it cool.
  2. Mash the cooked yuca in a bowl until smooth. Take small portions of the mashed yuca and roll them into balls, about the size of a golf ball.
  3. Coat each yuca ball in flour, then dip into the beaten eggs, and finally coat with breadcrumbs, ensuring they are fully covered.
  4. Heat the vegetable oil in a deep pan over medium heat. Fry the yuca balls in batches until golden brown, about 3-4 minutes per batch. Remove and drain on paper towels.
  5. Serve the fried yuca balls hot and enjoy!
