Ingredients

  • 2 lbs yuca, peeled and cut into chunks
  • 1 cup shredded cheese (such as mozzarella or cheddar)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Oil for frying

Instructions

  1. Boil the yuca chunks in salted water until tender, about 15-20 minutes. Drain and let cool.
  2. Mash the cooked yuca in a bowl until smooth. Add the salt and black pepper, and mix well.
  3. Take a small portion of the yuca mixture, flatten it in your hand, and place a small amount of shredded cheese in the center. Shape the yuca mixture into a ball, enclosing the cheese completely. Repeat with the remaining mixture and cheese.
  4. Dip each yuca and cheese ball into the beaten eggs, then roll in the breadcrumbs until fully coated.
  5. Heat oil in a deep skillet over medium heat. Fry the yuca and cheese balls in batches until golden brown and crispy, about 3-4 minutes per batch. Drain on paper towels.
  6. Serve the bollitos de yuca y queso hot and enjoy!
