Ingredients
- 2 cups corn kernels
- 1/2 cup all-purpose flour
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup water
- Oil for frying
- 1/4 cup mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
Instructions
- In a bowl, combine the corn, flour, red onion, cilantro, baking powder, salt, and black pepper. Gradually add water and mix until well combined.
- Heat oil in a skillet over medium heat. Drop spoonfuls of the corn mixture into the hot oil and fry until golden brown on both sides. Drain on paper towels.
- In a small bowl, mix mayonnaise, lime juice, chili powder, garlic powder, and cayenne pepper to make the chili lime sauce.
