Ingredients

  • 2 cups corn kernels
  • 1/2 cup all-purpose flour
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup water
  • Oil for frying
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper

Instructions

  1. In a bowl, combine the corn, flour, red onion, cilantro, baking powder, salt, and black pepper. Gradually add water and mix until well combined.
  2. Heat oil in a skillet over medium heat. Drop spoonfuls of the corn mixture into the hot oil and fry until golden brown on both sides. Drain on paper towels.
