Bone Soup (sup Tulang Perfection)
Bone Soup (Sup Tulang Perfection) is a traditional Bruneian dish known for its rich and flavorful broth. This hearty soup is perfect for warming up on a chilly day and is often enjoyed with a side of steamed rice or crusty bread.
Ingredients
- 1 kg beef or lamb bones
- 2 large onions, sliced
- 4 cloves garlic, minced
- 2-inch piece ginger, sliced
- 2 tomatoes, quartered
- 2 stalks lemongrass, smashed
- 2 cinnamon sticks
- 3 star anise
- 1 tbsp coriander seeds
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 1 tsp black peppercorns
- 1 tbsp tamarind paste
- 4 cups water
- Salt, to taste
Instructions
- In a large pot, dry roast the coriander seeds, cumin seeds, fennel seeds, and black peppercorns until fragrant. Grind the roasted spices into a fine powder.
- Place the beef or lamb bones in the pot and add water. Bring to a boil, then reduce heat and simmer for 1 hour.
- Add the onions, garlic, ginger, tomatoes, lemongrass, cinnamon sticks, star anise, and ground spices to the pot. Continue to simmer for another hour.
- Stir in the tamarind paste and season with salt to taste.
- Serve the bone soup hot, garnished with fresh cilantro and a squeeze of lime juice.
