Bone Soup (sup Tulang Perfection)

Ingredients

  • 1 kg beef or lamb bones
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 2-inch piece ginger, sliced
  • 2 tomatoes, quartered
  • 2 stalks lemongrass, smashed
  • 2 cinnamon sticks
  • 3 star anise
  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 1 tsp black peppercorns
  • 1 tbsp tamarind paste
  • 4 cups water
  • Salt, to taste

Instructions

  1. In a large pot, dry roast the coriander seeds, cumin seeds, fennel seeds, and black peppercorns until fragrant. Grind the roasted spices into a fine powder.
  2. Place the beef or lamb bones in the pot and add water. Bring to a boil, then reduce heat and simmer for 1 hour.
  3. Add the onions, garlic, ginger, tomatoes, lemongrass, cinnamon sticks, star anise, and ground spices to the pot. Continue to simmer for another hour.
  4. Stir in the tamarind paste and season with salt to taste.
  5. Serve the bone soup hot, garnished with fresh cilantro and a squeeze of lime juice.
