Booza (syrian Pistachio Ice Cream)
Booza is a traditional Syrian pistachio ice cream that is rich, creamy, and bursting with nutty flavors. This frozen treat is perfect for cooling down on a hot day or as a sweet ending to a delicious meal.
Ingredients
- 2 cups whole milk
- 1 cup heavy cream
- 1/2 cup sugar
- 1/2 cup pistachios, shelled and chopped
- 1 tablespoon cornstarch
- 1 teaspoon rose water
Instructions
- In a saucepan, combine the whole milk, heavy cream, and sugar. Heat over medium heat, stirring constantly until the sugar is dissolved and the mixture is hot but not boiling.
- In a small bowl, mix the cornstarch with 2 tablespoons of the hot milk mixture to create a slurry. Pour the slurry back into the saucepan and continue to cook, stirring constantly, until the mixture thickens slightly.
- Remove the saucepan from the heat and stir in the chopped pistachios and rose water. Allow the mixture to cool to room temperature.
- Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
- Transfer the ice cream to a freezer-safe container, cover with plastic wrap directly on the surface of the ice cream, and freeze for at least 4 hours or until firm.
