Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1/2 cup pistachios, shelled and chopped
  • 1 tablespoon cornstarch
  • 1 teaspoon rose water

Instructions

  1. In a saucepan, combine the whole milk, heavy cream, and sugar. Heat over medium heat, stirring constantly until the sugar is dissolved and the mixture is hot but not boiling.
  2. In a small bowl, mix the cornstarch with 2 tablespoons of the hot milk mixture to create a slurry. Pour the slurry back into the saucepan and continue to cook, stirring constantly, until the mixture thickens slightly.
  3. Remove the saucepan from the heat and stir in the chopped pistachios and rose water. Allow the mixture to cool to room temperature.
  4. Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
  5. Transfer the ice cream to a freezer-safe container, cover with plastic wrap directly on the surface of the ice cream, and freeze for at least 4 hours or until firm.
