Ingredients

  • 1 cup black rice
  • 4 cups milk
  • 1/2 cup jaggery (or to taste)
  • 4-5 green cardamom pods, crushed
  • Assorted nuts for garnish (e.g., almonds, cashews)

Instructions

  1. Rinse the black rice under running water and soak it for 2-3 hours.
  2. In a heavy-bottomed pan, bring the milk to a boil.
  3. Drain the soaked rice and add it to the boiling milk. Simmer on low heat, stirring occasionally, until the rice is cooked and the mixture thickens, about 30-40 minutes.
  4. Add the jaggery and crushed cardamom pods, and continue to cook for another 5-10 minutes, stirring constantly.
  5. Remove from heat and let the pudding cool to room temperature.
  6. Refrigerate the pudding for at least 2 hours before serving.
  7. Garnish with assorted nuts before serving.
