Ingredients

  • 2 lbs fresh spinach, washed and chopped
  • 1 cup Greek yogurt
  • 1 cup feta cheese, crumbled
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh dill
  • 3 cloves garlic, minced
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 1/4 cup breadcrumbs

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the chopped spinach, Greek yogurt, feta cheese, Parmesan cheese, dill, garlic, nutmeg, salt, and pepper.
  3. In a skillet, heat the olive oil over medium heat and sauté the chopped onion until soft and translucent.
  4. Add the sautéed onion to the spinach mixture and stir to combine.
  5. Transfer the mixture to a greased baking dish and sprinkle the breadcrumbs on top.
  6. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the casserole is bubbly.
