Borani Esfenaj is a delicious Afghan dish made with creamy spinach and cheese, baked to perfection. This comforting casserole is perfect for a cozy family dinner or a special gathering.
Ingredients
- 2 lbs fresh spinach, washed and chopped
- 1 cup Greek yogurt
- 1 cup feta cheese, crumbled
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh dill
- 3 cloves garlic, minced
- 1/4 teaspoon ground nutmeg
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 1/4 cup breadcrumbs
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the chopped spinach, Greek yogurt, feta cheese, Parmesan cheese, dill, garlic, nutmeg, salt, and pepper.
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion until soft and translucent.
- Add the sautéed onion to the spinach mixture and stir to combine.
- Transfer the mixture to a greased baking dish and sprinkle the breadcrumbs on top.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the casserole is bubbly.
- Let it cool for a few minutes before serving.
