Ingredients

  • 1 package of phyllo dough
  • 2 cups chopped spinach
  • 1 cup crumbled feta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the spinach, feta cheese, Parmesan cheese, parsley, green onions, olive oil, salt, and black pepper. Mix well.
  3. Unroll the phyllo dough and cut it into 3-inch strips. Brush each strip with olive oil.
  4. Place a spoonful of the spinach and cheese mixture at one end of each strip, then fold the dough over the filling to form a triangle. Continue folding the dough in a triangle shape until you reach the end of the strip.
  5. Place the pies on a baking sheet and brush the tops with olive oil.
