Ingredients
- 1 package of phyllo dough
- 2 cups chopped spinach
- 1 cup crumbled feta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the spinach, feta cheese, Parmesan cheese, parsley, green onions, olive oil, salt, and black pepper. Mix well.
- Unroll the phyllo dough and cut it into 3-inch strips. Brush each strip with olive oil.
- Place a spoonful of the spinach and cheese mixture at one end of each strip, then fold the dough over the filling to form a triangle. Continue folding the dough in a triangle shape until you reach the end of the strip.
- Place the pies on a baking sheet and brush the tops with olive oil.
- Bake for 20-25 minutes, or until the pies are golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving.
