Ingredients
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 cup ricotta cheese
- 1/2 cup green onions, chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/4 cup unsalted butter, melted
- 1 package phyllo dough
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the spinach, feta cheese, ricotta cheese, green onions, dill, parsley, salt, pepper, and nutmeg.
- Unroll the phyllo dough and cover it with a damp towel to prevent it from drying out.
- Place one sheet of phyllo dough on a clean surface and brush it with melted butter. Repeat with 5 more sheets, stacking each one on top of the other.
- Spoon the spinach and cheese mixture along the long edge of the phyllo dough, leaving some space at the edges.
- Roll the phyllo dough and filling into a log, then shape it into a coil and place it on a baking sheet.
- Repeat the process with the remaining phyllo dough and filling to make more coils.
- Brush the tops of the coils with melted butter.
- Bake in the preheated oven for 25-30 minutes, or until the borek is golden brown and crispy.
- Remove from the oven and let it cool for a few minutes before serving.
