Ingredients

  • 1 package of filo pastry sheets
  • 2 cups of fresh spinach, chopped
  • 1 cup of feta cheese, crumbled
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of olive oil
  • Salt and pepper to taste
  • 1/4 cup of melted butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Sauté the chopped onion and minced garlic until softened.
  3. Add the chopped spinach to the skillet and cook until wilted. Season with salt and pepper to taste. Remove from heat and let it cool.
  4. In a bowl, combine the cooked spinach mixture with the crumbled feta cheese.
  5. Unroll the filo pastry sheets and cut them into long strips, about 3 inches wide.
  6. Brush a strip of filo pastry with melted butter. Place a spoonful of the spinach and feta mixture at one end of the strip. Fold the pastry over the filling to form a triangle, then continue folding to the end of the strip. Repeat with the remaining pastry and filling.
  7. Place the assembled filo triangles on a baking sheet lined with parchment paper. Brush the tops with more melted butter.
  8. Bake in the preheated oven for 20-25 minutes, or until the triangles are golden and crispy.
  9. Remove from the oven and let them cool for a few minutes before serving.
