Ingredients

  • 1 kg beef, cut into chunks
  • 4 shallots, finely chopped
  • 5 cloves garlic, minced
  • 3 lemongrass stalks, bruised
  • 5 kaffir lime leaves
  • 400ml coconut milk
  • 1 tbsp tamarind paste
  • 3 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add shallots and garlic, and sauté until fragrant.
  3. Add beef chunks and cook until browned.
  4. Pour in coconut milk, tamarind paste, lemongrass, and kaffir lime leaves.
  5. Season with salt, reduce heat to low, and simmer for 3 hours, stirring occasionally.
  6. Once the beef is tender and the sauce has thickened, remove from heat and serve hot.
