Ingredients
- 1 kg beef, cut into chunks
- 4 shallots, finely chopped
- 5 cloves garlic, minced
- 3 lemongrass stalks, bruised
- 5 kaffir lime leaves
- 400ml coconut milk
- 1 tbsp tamarind paste
- 3 tbsp vegetable oil
- Salt to taste
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add shallots and garlic, and sauté until fragrant.
- Add beef chunks and cook until browned.
- Pour in coconut milk, tamarind paste, lemongrass, and kaffir lime leaves.
- Season with salt, reduce heat to low, and simmer for 3 hours, stirring occasionally.
- Once the beef is tender and the sauce has thickened, remove from heat and serve hot.
