Ingredients

  • 3 medium beets, peeled and grated
  • 4 cups beef or vegetable broth
  • 1 onion, finely chopped
  • 2 carrots, peeled and grated
  • 2 potatoes, peeled and diced
  • 1/2 small head of cabbage, shredded
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons white vinegar
  • 1 bay leaf
  • Salt and pepper to taste
  • Sour cream, for serving
  • Fresh dill, for garnish

Instructions

  1. In a large pot, sauté the onions and garlic until they are soft and translucent.
  2. Add the grated beets, carrots, and potatoes to the pot and cook for 5 minutes, stirring occasionally.
  3. Pour in the broth, tomato paste, vinegar, and bay leaf. Season with salt and pepper, then bring the soup to a boil.
  4. Reduce the heat and let the soup simmer for 40-45 minutes, or until the vegetables are tender.
  5. Stir in the shredded cabbage and cook for an additional 10 minutes.
  6. Remove the bay leaf and adjust the seasoning if needed.
  7. Serve the borscht hot, topped with a dollop of sour cream and a sprinkle of fresh dill.
