Ingredients
- 3 medium beets, peeled and grated
- 4 cups beef or vegetable broth
- 1 onion, finely chopped
- 2 carrots, peeled and grated
- 2 potatoes, peeled and diced
- 1/2 small head of cabbage, shredded
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons white vinegar
- 1 bay leaf
- Salt and pepper to taste
- Sour cream, for serving
- Fresh dill, for garnish
Instructions
- In a large pot, sauté the onions and garlic until they are soft and translucent.
- Add the grated beets, carrots, and potatoes to the pot and cook for 5 minutes, stirring occasionally.
- Pour in the broth, tomato paste, vinegar, and bay leaf. Season with salt and pepper, then bring the soup to a boil.
- Reduce the heat and let the soup simmer for 40-45 minutes, or until the vegetables are tender.
- Stir in the shredded cabbage and cook for an additional 10 minutes.
- Remove the bay leaf and adjust the seasoning if needed.
- Serve the borscht hot, topped with a dollop of sour cream and a sprinkle of fresh dill.
