Ingredients

  • 4 medium beets, peeled and grated
  • 4 cups vegetable broth
  • 2 cups shredded cabbage
  • 1 onion, chopped
  • 2 carrots, peeled and grated
  • 2 potatoes, peeled and diced
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/4 cup chopped fresh dill
  • 1/2 cup sour cream (for serving)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the beets, carrots, and potatoes to the pot, and cook for 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and add the bay leaf. Bring the mixture to a boil, then reduce the heat and simmer for 30 minutes.
  4. Add the shredded cabbage to the pot and cook for an additional 15 minutes, or until all the vegetables are tender.
  5. Season the borscht with salt and pepper, then stir in the fresh dill. Remove the bay leaf before serving.
  6. Serve the borscht hot, with a dollop of sour cream on top.
