Borscht (borscht Bonanza)
Borscht, also known as Borscht Bonanza, is a classic Eastern European soup that is both hearty and flavorful. This vibrant soup is made with beets, cabbage, and other vegetables, and is often served with a dollop of sour cream.
Ingredients
- 4 medium beets, peeled and grated
- 4 cups vegetable broth
- 2 cups shredded cabbage
- 1 onion, chopped
- 2 carrots, peeled and grated
- 2 potatoes, peeled and diced
- 3 cloves garlic, minced
- 1 bay leaf
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/4 cup chopped fresh dill
- 1/2 cup sour cream (for serving)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the beets, carrots, and potatoes to the pot, and cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and add the bay leaf. Bring the mixture to a boil, then reduce the heat and simmer for 30 minutes.
- Add the shredded cabbage to the pot and cook for an additional 15 minutes, or until all the vegetables are tender.
- Season the borscht with salt and pepper, then stir in the fresh dill. Remove the bay leaf before serving.
- Serve the borscht hot, with a dollop of sour cream on top.
