Ingredients
- 3 medium beets, peeled and grated
- 4 cups beef or vegetable broth
- 1 onion, finely chopped
- 2 carrots, peeled and grated
- 1 potato, peeled and diced
- 1/2 small head of cabbage, shredded
- 2 cloves garlic, minced
- 1/4 cup tomato paste
- 2 tablespoons olive oil
- 1 bay leaf
- Salt and pepper to taste
- 1/4 cup sour cream (optional, for serving)
- Fresh dill, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and sauté until translucent.
- Add the grated beets, carrots, and garlic to the pot. Cook for 5 minutes, stirring occasionally.
- Pour in the broth and add the potato, cabbage, tomato paste, and bay leaf. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, or until the vegetables are tender.
- Remove the bay leaf and adjust the seasoning if needed.
- Serve hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
