Ingredients

  • 3 medium beets, peeled and grated
  • 4 cups beef or vegetable broth
  • 1 onion, finely chopped
  • 2 carrots, peeled and grated
  • 1 potato, peeled and diced
  • 1/2 small head of cabbage, shredded
  • 2 cloves garlic, minced
  • 1/4 cup tomato paste
  • 2 tablespoons olive oil
  • 1 bay leaf
  • Salt and pepper to taste
  • 1/4 cup sour cream (optional, for serving)
  • Fresh dill, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and sauté until translucent.
  2. Add the grated beets, carrots, and garlic to the pot. Cook for 5 minutes, stirring occasionally.
  3. Pour in the broth and add the potato, cabbage, tomato paste, and bay leaf. Season with salt and pepper.
  4. Bring the soup to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, or until the vegetables are tender.
  5. Remove the bay leaf and adjust the seasoning if needed.
  6. Serve hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
