Borshch Bonanza

Ingredients

  • 3 medium beets, peeled and grated
  • 4 cups beef or vegetable broth
  • 1 onion, finely chopped
  • 2 carrots, peeled and grated
  • 2 potatoes, peeled and diced
  • 1/2 small cabbage, shredded
  • 1 can (14 oz) diced tomatoes
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tbsp vegetable oil
  • 2 bay leaves
  • Salt and pepper to taste
  • 1/4 cup chopped fresh dill
  • 1/4 cup sour cream (optional, for serving)

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and sauté until translucent.
  2. Add the grated beets, carrots, and garlic to the pot. Cook for 5 minutes, stirring occasionally.
  3. Pour in the broth and add the diced tomatoes, tomato paste, bay leaves, and potatoes. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  4. Add the shredded cabbage to the pot and cook for an additional 15 minutes, or until all the vegetables are tender.
  5. Season the borshch with salt and pepper to taste. Remove the bay leaves and discard.
  6. Serve the borshch hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
