Borshch Bonanza
Borshch Bonanza is a classic Ukrainian beet soup that is hearty, flavorful, and perfect for a cozy night in. This recipe is a celebration of traditional Ukrainian cuisine and is sure to warm your soul.
Ingredients
- 3 medium beets, peeled and grated
- 4 cups beef or vegetable broth
- 1 onion, finely chopped
- 2 carrots, peeled and grated
- 2 potatoes, peeled and diced
- 1/2 small cabbage, shredded
- 1 can (14 oz) diced tomatoes
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 2 tbsp vegetable oil
- 2 bay leaves
- Salt and pepper to taste
- 1/4 cup chopped fresh dill
- 1/4 cup sour cream (optional, for serving)
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and sauté until translucent.
- Add the grated beets, carrots, and garlic to the pot. Cook for 5 minutes, stirring occasionally.
- Pour in the broth and add the diced tomatoes, tomato paste, bay leaves, and potatoes. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- Add the shredded cabbage to the pot and cook for an additional 15 minutes, or until all the vegetables are tender.
- Season the borshch with salt and pepper to taste. Remove the bay leaves and discard.
- Serve the borshch hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
