Ingredients
- 6 sheets of phyllo dough
- 2 cups mashed pumpkin
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the mashed pumpkin, chopped onion, minced garlic, feta cheese, olive oil, paprika, salt, and pepper.
- Layer 3 sheets of phyllo dough in a greased baking dish, brushing each sheet with olive oil.
- Spread half of the pumpkin mixture over the phyllo dough.
- Layer the remaining 3 sheets of phyllo dough on top, again brushing each sheet with olive oil.
- Spread the remaining pumpkin mixture over the top layer of phyllo dough.
- Bake in the preheated oven for 45 minutes, or until the phyllo dough is golden brown.
- Let the pie cool for a few minutes before slicing and serving.
