Ingredients

  • 6 sheets of phyllo dough
  • 2 cups mashed pumpkin
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the mashed pumpkin, chopped onion, minced garlic, feta cheese, olive oil, paprika, salt, and pepper.
  3. Layer 3 sheets of phyllo dough in a greased baking dish, brushing each sheet with olive oil.
  4. Spread half of the pumpkin mixture over the phyllo dough.
  5. Layer the remaining 3 sheets of phyllo dough on top, again brushing each sheet with olive oil.
  6. Spread the remaining pumpkin mixture over the top layer of phyllo dough.
  7. Bake in the preheated oven for 45 minutes, or until the phyllo dough is golden brown.
  8. Let the pie cool for a few minutes before slicing and serving.
