Ingredients

  • 500g potatoes, peeled and thinly sliced
  • 500g mushrooms, sliced
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 200g sour cream
  • 200ml vegetable broth
  • 100g grated cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  3. Add the mushrooms and cook until they release their liquid and become golden brown. Season with salt and pepper.
  4. In a greased baking dish, layer half of the sliced potatoes. Spread the mushroom mixture on top of the potatoes.
  5. Layer the remaining potatoes on top of the mushrooms.
  6. In a bowl, mix the sour cream and vegetable broth. Pour this mixture over the potatoes.
  7. Sprinkle the grated cheese on top.
  8. Cover the dish with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15 minutes or until the top is golden and bubbly.
  9. Let it cool for a few minutes before serving.
