Ingredients
- 500g potatoes, peeled and thinly sliced
- 500g mushrooms, sliced
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 200g sour cream
- 200ml vegetable broth
- 100g grated cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the mushrooms and cook until they release their liquid and become golden brown. Season with salt and pepper.
- In a greased baking dish, layer half of the sliced potatoes. Spread the mushroom mixture on top of the potatoes.
- Layer the remaining potatoes on top of the mushrooms.
- In a bowl, mix the sour cream and vegetable broth. Pour this mixture over the potatoes.
- Sprinkle the grated cheese on top.
- Cover the dish with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15 minutes or until the top is golden and bubbly.
- Let it cool for a few minutes before serving.
