Ingredients

  • 500g puff pastry
  • 500g mushrooms, sliced
  • 200g feta cheese, crumbled
  • 3 eggs
  • 1 onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a pan, sauté the onions until translucent. Add the mushrooms and cook until they release their liquid and it evaporates.
  3. In a bowl, beat the eggs and mix in the crumbled feta cheese, parsley, salt, and pepper.
  4. Roll out the puff pastry and line a greased tart pan with it. Trim any excess pastry.
  5. Spoon the mushroom mixture onto the pastry, then pour the egg and cheese mixture over the mushrooms.
  6. Bake for 40 minutes or until the tart is golden and set.
  7. Let it cool for a few minutes before slicing and serving.
