Bosanska Zeljanica (bosnian Spinach Pie)

Ingredients

  • 1 pound fresh spinach, chopped
  • 1 large onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup cottage cheese
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 pound phyllo dough
  • 1/4 cup unsalted butter, melted

Instructions

  1. In a large bowl, combine the chopped spinach, onion, feta cheese, cottage cheese, olive oil, salt, and black pepper. Mix well.
  2. Preheat the oven to 375°F (190°C).
  3. Brush a 9x13 inch baking dish with some of the melted butter.
  4. Layer 8 sheets of phyllo dough in the bottom of the baking dish, brushing each sheet with melted butter.
  5. Spoon half of the spinach mixture over the phyllo dough.
  6. Layer 4 more sheets of phyllo dough on top of the spinach mixture, brushing each sheet with melted butter.
  7. Spoon the remaining spinach mixture over the phyllo dough.
  8. Layer the remaining 8 sheets of phyllo dough on top, again brushing each sheet with melted butter.
  9. Using a sharp knife, score the top layer of phyllo dough into squares or diamonds.
  10. Bake in the preheated oven for 40-45 minutes, or until the phyllo dough is golden brown and crispy.
  11. Allow the zeljanica to cool for a few minutes before slicing and serving.
