Ingredients

  • 1.5 lbs beef, cubed
  • 4 large potatoes, peeled and sliced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. Stir in the tomato paste, paprika, and dried thyme, and cook for 1-2 minutes.
  4. Return the browned beef to the pot, and add the diced tomatoes and beef broth. Season with salt and pepper. Bring to a simmer, then reduce the heat and let it cook for 30 minutes.
  5. Preheat the oven to 375°F (190°C).
  6. Layer half of the sliced potatoes in the bottom of a casserole dish. Pour half of the beef and tomato mixture over the potatoes. Repeat with another layer of potatoes and the remaining beef and tomato mixture.
  7. Cover the casserole dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is slightly golden.
  8. Let the casserole rest for a few minutes before serving.
