Ingredients
- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 8 oz mushrooms, sliced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 1/2 cup sour cream
- 2 tablespoons chopped fresh parsley
Instructions
- Season the chicken thighs with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 3 minutes. Add the minced garlic and cook for an additional 1 minute.
- Add the sliced mushrooms to the skillet and cook until they release their liquid and start to brown, about 5 minutes.
- Pour in the chicken broth and return the chicken thighs to the skillet. Bring to a simmer, then reduce the heat to low, cover, and cook for 30 minutes.
- Stir in the sour cream and chopped parsley. Cook for an additional 5 minutes, then remove from heat.
