Bosanski Jelo Sa Piletinom I Gljivama (bosnian Chicken And Mushroom Casserole)

Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 8 oz mushrooms, sliced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Season the chicken thighs with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and cook until softened, about 3 minutes. Add the minced garlic and cook for an additional 1 minute.
  4. Add the sliced mushrooms to the skillet and cook until they release their liquid and start to brown, about 5 minutes.
  5. Pour in the chicken broth and return the chicken thighs to the skillet. Bring to a simmer, then reduce the heat to low, cover, and cook for 30 minutes.
  6. Stir in the sour cream and chopped parsley. Cook for an additional 5 minutes, then remove from heat.
  7. Serve the Bosanski Jelo sa Piletinom i Gljivama hot, garnished with extra parsley if desired.
