Ingredients
- 4 chicken thighs
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup chicken broth
- Chopped fresh parsley for garnish
Instructions
- Season the chicken thighs with paprika, salt, and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion, garlic, and diced potatoes. Cook for 5 minutes, stirring occasionally.
- Add the sliced red bell pepper to the skillet and cook for an additional 3 minutes.
- Return the browned chicken thighs to the skillet. Pour in the chicken broth and bring to a simmer. Cover and cook for 20-25 minutes, or until the chicken is cooked through and the potatoes are tender.
- Garnish with chopped fresh parsley before serving.
