  • 2 tablespoons vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 4 cups chicken or vegetable broth
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic, lamb cubes, and spices (paprika, cumin, coriander, turmeric, cinnamon, cayenne pepper, salt, and pepper). Cook until the lamb is browned on all sides.
  3. Add the diced potatoes and chopped tomatoes to the pot. Pour in the chicken or vegetable broth, and bring the curry to a boil.
  4. Reduce the heat to low, cover the pot, and let the curry simmer for about 45-50 minutes, or until the lamb is tender and the potatoes are cooked through.
  5. Once done, adjust the seasoning if needed and garnish with fresh parsley before serving.
