Boshi Mashuni (coconut Pancakes)

Ingredients

  • 2 cups all-purpose flour
  • 1 cup grated coconut
  • 2 eggs
  • 1 cup coconut milk
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons butter, melted

Instructions

  1. In a large bowl, mix together the flour, grated coconut, sugar, and salt.
  2. In a separate bowl, whisk together the eggs, coconut milk, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a non-stick pan over medium heat and brush with melted butter.
  5. Pour 1/4 cup of batter onto the pan and cook until bubbles form on the surface.
  6. Flip the pancake and cook for another 1-2 minutes until golden brown.
  7. Repeat with the remaining batter.
  8. Serve the pancakes warm with a drizzle of honey or maple syrup.
