Ingredients
- 2 cups all-purpose flour
- 1 cup grated coconut
- 2 eggs
- 1 cup coconut milk
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 2 tablespoons butter, melted
Instructions
- In a large bowl, mix together the flour, grated coconut, sugar, and salt.
- In a separate bowl, whisk together the eggs, coconut milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Heat a non-stick pan over medium heat and brush with melted butter.
- Pour 1/4 cup of batter onto the pan and cook until bubbles form on the surface.
- Flip the pancake and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter.
- Serve the pancakes warm with a drizzle of honey or maple syrup.
