Bosnian Begova Čorba (Begova Čorba)

Ingredients

  • 1 lb beef, cubed
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 potatoes, cubed
  • 1/2 cup rice
  • 4 cups beef broth
  • 1/2 cup sour cream
  • 2 tbsp flour
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onions and cook until they are soft and translucent.
  2. Add the beef to the pot and cook until it is browned on all sides.
  3. Stir in the carrots, potatoes, and rice. Pour in the beef broth and bring the soup to a boil.
  4. Reduce the heat and let the soup simmer for about 45 minutes, or until the meat and vegetables are tender.
  5. In a small bowl, mix the sour cream and flour until smooth. Gradually stir in a ladle of hot soup into the sour cream mixture to temper it.
  6. Pour the sour cream mixture back into the soup and stir well. Let the soup simmer for an additional 10 minutes.
  7. Season with salt and pepper to taste.
  8. Serve the Begova Čorba hot, garnished with a dollop of sour cream if desired.
