Ingredients
- 1 lb beef, cubed
- 1 onion, finely chopped
- 2 carrots, diced
- 2 potatoes, cubed
- 1/2 cup rice
- 4 cups beef broth
- 1/2 cup sour cream
- 2 tbsp flour
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the onions and cook until they are soft and translucent.
- Add the beef to the pot and cook until it is browned on all sides.
- Stir in the carrots, potatoes, and rice. Pour in the beef broth and bring the soup to a boil.
- Reduce the heat and let the soup simmer for about 45 minutes, or until the meat and vegetables are tender.
- In a small bowl, mix the sour cream and flour until smooth. Gradually stir in a ladle of hot soup into the sour cream mixture to temper it.
- Pour the sour cream mixture back into the soup and stir well. Let the soup simmer for an additional 10 minutes.
- Season with salt and pepper to taste.
- Serve the Begova Čorba hot, garnished with a dollop of sour cream if desired.
