Ingredients
- 4 chicken thighs
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chicken thighs and cook until browned on both sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
- Add the rice, paprika, cumin, salt, and pepper to the pot. Stir to combine with the onion and garlic.
- Pour in the chicken broth and bring to a simmer. Return the chicken thighs to the pot.
- Cover the pot and let the chicken and rice simmer for 20-25 minutes, or until the rice is cooked and the chicken is tender.
- Once done, remove the pot from the heat and let it rest for 5 minutes before serving.
