Ingredients
- 1.5 kg lamb, cut into chunks
- 1 kg potatoes, peeled and diced
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 red bell peppers, diced
- 2 tomatoes, chopped
- 2 tbsp paprika
- 1 tsp dried thyme
- 1 tsp caraway seeds
- 4 cups beef or vegetable broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the lamb chunks and brown them on all sides.
- Add the chopped onions and minced garlic to the pot and sauté until the onions are translucent.
- Stir in the paprika, dried thyme, and caraway seeds, and cook for a few minutes to release the flavors.
- Add the diced potatoes, red bell peppers, and chopped tomatoes to the pot. Pour in the beef or vegetable broth and season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low and let it simmer for about 2 hours, or until the lamb is tender and the potatoes are cooked through.
