Ingredients
- 1 large head of cabbage
- 1 lb ground beef
- 1 cup uncooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1 cup beef broth
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
- In a bowl, mix the ground beef, rice, onion, garlic, parsley, salt, and pepper.
- Place a spoonful of the beef and rice mixture onto each cabbage leaf and roll them up, tucking in the sides as you go.
- Place the stuffed cabbage rolls in a large pot. Pour the crushed tomatoes and beef broth over the rolls. Cover and simmer for 1.5-2 hours, or until the cabbage is tender and the filling is cooked through.
