Bosnian Stuffed Cabbage Rolls with Beef and Rice (Bosanske Punjene Sarma sa Meso i Rižom)

Ingredients

  • 1 large head of cabbage
  • 1 lb ground beef
  • 1 cup uncooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 cup beef broth
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
  2. In a bowl, mix the ground beef, rice, onion, garlic, parsley, salt, and pepper.
  3. Place a spoonful of the beef and rice mixture onto each cabbage leaf and roll them up, tucking in the sides as you go.
  4. Place the stuffed cabbage rolls in a large pot. Pour the crushed tomatoes and beef broth over the rolls. Cover and simmer for 1.5-2 hours, or until the cabbage is tender and the filling is cooked through.
