Ingredients
- 4 medium zucchinis
- 1 lb ground beef
- 1 cup cooked rice

- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 cup tomato sauce
- 1/2 cup beef broth
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center. Set aside.
- In a large bowl, combine the ground beef, cooked rice, onion, garlic, paprika, oregano, salt, pepper, and Parmesan cheese. Mix until well combined.
- Stuff each hollowed-out zucchini with the beef and rice mixture.
- Heat the olive oil in a large skillet over medium heat. Place the stuffed zucchinis in the skillet and cook for 2-3 minutes on each side until browned.
- In a separate bowl, mix the tomato sauce and beef broth. Pour the mixture over the stuffed zucchinis in the skillet.
