Bosnian Stuffed Zucchini with Beef and Rice (Bosanske Punjene Tikvice sa Meso i Rižom)

Ingredients

  • 4 medium zucchinis
  • 1 lb ground beef
  • 1 cup cooked rice

  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 cup tomato sauce
  • 1/2 cup beef broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center. Set aside.
  3. In a large bowl, combine the ground beef, cooked rice, onion, garlic, paprika, oregano, salt, pepper, and Parmesan cheese. Mix until well combined.
  4. Stuff each hollowed-out zucchini with the beef and rice mixture.
